Provided you have the access to do so, go to Tracks Config in the Tracks Main Menu. Click in New Track and simply add the different Tasks of the process you want users to follow.

You may also assign certain Tasks to a specific or group of users to ensure that some Tasks are assigned to a specialized representative of your team.
